Madera welcomes award-winning chef and culinary personality Seamus Mullen, who joins as Culinary Director. Seamus’ cooking style is approachable and simplistic, allowing the ingredients and their flavors to shine on the plate.

Offering a menu of refined dishes, Madera honors the culinary traditions of the Bay Area, created on the wood-burning grill and hearth using sustainably and naturally sourced resources coupled with the harvest of the surrounding farming communities.

The Swim Club – Catch a warm afternoon, poolside with a cocktail in hand and our lighter fare menu created in partnership with Seamus Mullen, who is best known for his communal and ingredient-driven approach to Spanish cuisine. Seamus brings new cooking styles and dining experiences to Rosewood Sand Hill, such as paella and grilled seafood poolside, live fire cooking and whole animal roasts.

A new beverage menu offers refreshing The Bad Stuff Tequila cocktails, including the Swim Club Margarita, made with Bad Stuff's Reposado Tequila, Grand Marnier, agave and lime for the ultimate paradisial experience.
